Kelly & Zac from Regal Honey are based in Lake Macquarie – an area where bees were wiped out due to the Verroa virus. Getting back on track they currently have beehives in Mudgee & Glen Oak a hamlet in the foothills of the Barrington Tops National Park, NSW. The bees feed mostly off Australian bush native flora & eucalypt trees. It produces a medium strength honey ideal for toast, tea & baking.
There is no cream in creamed honey. Liquid honey is whipped to a thicker consistency until it becomes creamy. It is labour intensive to make. Not all honey producers will take the time & make the effort to cream their honey. It changes the taste slightly. Some people who don’t like honey, enjoy the taste & texture of creamed honey & this one is delicious. A good creamed honey is light in colour, with a little froth on top of the jar. If your creamed honey separates due to heat, give it a stir and place in the fridge to reset.
