Chilli & Lime Sambal
Goan Cuisine is produced in WA. This sambal displays distinctive aroma of fresh chillies with undertones of citrus and caramelised sugar. Translation: It’s a medium heat, we’d rate around six out of ten. (Each batch is a little different.) When you pop it into your mouth you get a hit of chilli and then the most amazing intense lime flavour to follow through. It’s an incredible burst of flavour in your mouth, and when it goes on the tasting bar it sells out in a day! Excellent as a dipping sauce for BBQ meats, kebabs, cold meat, fish cakes, pakoras, samosasand spring rolls. Add to mayonnaise or sour cream and serve with tacos or corn chips. A little bowl on a mezze plate for extra zing is perfect.
Almost 500 years ago the Portuguese sailed to the East in search of exotic spices, and Goa became their main settlement. Here began the spicy Indo European gastronomic romance… the fiery food of the region mellowed to accommodate gentler European palates. Continental cuisine was enriched with a bouquet of spices as only the virtuosity of Goan cooks could achieve.
