Pukara sweet and sour Caramelised Onion Jam is deliciously rich and complex.  With hints of smokiness this jam can be used with grilled meats, in quiches, tarts or perfect served with a ploughman’s platter.  Tasty on a juicy Wagyu beef burger or with a good farmhouse cheese on crusty sourdough bread.  For a great lunch, char grill marinated lamb on the BBQ or in a skillet and serve with Mediterranean salad and minted yoghurt in a wrap.

About Balsamic: On a trip to Italy in 2013 mum (Shirley) and I visited Modena in Italy’s north west corner.  It’s the home of the finest balsamic in the world.  We visited one of 10 original family producers and learnt that whilst products labelled as balsamic vinegars can be churned out by the thousands per day in a factory, making a true balsamic vinegar is like making a fine bottle of wine- it takes time and patience.  It must age in a barrel over one year or decades.  The longer it remains in the barrel the more intense the flavour, and by adding and blending the grape must, or grape juice it changes the flavour of the balsamic.

The grape must evaporates away and must be added to.  Each time this process occurs the barrel gets smaller and smaller.  The oldest balsamic is so intense in flavour it is bottled out of a barrel that is about 30cm long.  We purchased 6yr, 12yr and 25yr balsamics to bring home and enjoy.  They are far superior to any other I have tried – until now.  That’s because Pukara use similar traditional techniques asthe Italians.  Pukara uses wine and grape juice.  Their mother culture used to produce the vinegars, has been actively producing quality vinegars since the late 1800’s.
